I have been drawn to any recipe involving pumpkin. I found this cookie recipe on my friend Tracey's blog. It makes a ton of cookies (5 dozen) so plan on sharing them with friends or half the recipe.
I made the dough the night before and threw it in the fridge b/c we decided to watch a movie (The Green Zone). It was good, but really left me hanging - however, that was likely the point of the movie... Rob had read the book and said the book had more details and less of a storyline. I am not typically into war movies/books, but I may give this one a read. Back to the cookies...
Notice the holes in the silicon mat? Back when we were living in Idaho, Penny pulled it out of the drawer below the oven and had her way with it. Still works like a charm and haven't needed to replace it.

1 c (2 sticks) unsalted butter, softened
1 c white sugar
1 c light brown sugar
2 large eggs
1 t vanilla
1 c canned pumpkin puree
3 c all-purpose flour
2 t baking soda
1/2 t salt
1 t ground cinnamon
1/2 t ground ginger
1/4 t ground nutmeg
1/4 t ground cloves (I omitted)
2 c (12 oz) milk chocolate chips (I used 2 c mini semisweet chips)
Heat oven to 350F. Spray cookie sheets with nonstick spray, line with parchment, or use silicon mats.
Using a mixer, beat the butter until smooth. Beat in the sugars a little at a time until the mixture is light and fluffy. Beat in the eggs one at a time, the mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour and other dry ingredients (I skipped this b/c I am against dirtying another bowl). Slowly beat the flour mixture (or in my case flour, dry ingredients, more flour...) into the batter in thirds. Stir in the chips. Scoop dough by the heaping tablespoon onto prepared baking sheets. bake for 15-20 minutes (no more than 15 minutes for me), or until the cookies are browned around the edges. Let cookies rest for 2 minutes then remove with a spatula and cool on wire racks. Makes 60 cookies.
Just a friendly reminder - little ts are teaspoons and big Ts are tablespoons.
